Chef's Vision
Our chef Martin puts emphasis on fresh seasonal ingredients, simple yet tasty recipes and unique presentation of dishes. He feels obliged to prepare nutritionally balanced, healthy meals which at the same time enchant all the guest's senses by its delicious taste, rich flavors and various textures and he inspires his team to do this with genuine honesty, creativity, passion and empathy. He believes that constant search for great seasonal local and sustainable products, treating it with respect, knowledge and skill is necessary to meet and exceed the guest's expectations.

Story of Chef Martin

Martin developed his passion for cooking in an early age as he was inspired by his family that had been pursuing a culinary career as well. Over the years, he has enriched his professional life with various experiences from both the Czech Republic and abroad.

Encouraged to gain experiences abroad, Martin moved to Great Britain, where he was privileged to cook for Royal Banks of Scotland executives or to treat the exclusive dinners for VIP lounges in Manchester United FC stadium.

After returning to Prague, Martin was gaining experience in many restaurants such as Maze Prague at Hilton Old Town Hotel, a Michelin starred French restaurant, Hard Rock Café Prague or Le Grill. He had the honor of cooking for some famous guests including Ennio Morricone, Mireille Mathieu, Mike Tyson or Priscilla Presley.

His longtime experiences led him to join the Augustine restaurant where he leverages his passion, creativity and empathy to create high quality epicurean experiences for guests.

Augustine Restaurant is located by the courtyard of a former Augustinian monastery and represents a harmonic combination of 700 years of history and modern design. It is exactly its location that inspired its name. The unique culinary experience you will have in historic locations such as The Refectory, St. Thomas Brewery Bar or the Sundial Garden will surely leave an impression. The cook team puts emphasis on fresh seasonal ingredients, simple yet tasty recipes and unique presentation of dishes.
Augustine restaurant was also awarded three Golden Lions during the evaluation of the best (not only in) Prague restaurants from Royal Gastro 2017 and was nominated the country's Top Hotel Restaurant in 2018 by Czech Hotel Awards and one of the best restaurants of the Czech Republic by TopLife Czech several years in a row, including 2019!
